So you’re missing out on having cake because you are allergic to dairy and eggs? No problem! Cake does not necessarily need any butter or egg whites or egg yolk infact, I find it tastes even better when it’s purely plant based. For those of you who keep giving your vegan or allergy friends fruits or something else. I got a challenge for you surprise your friend with this lovely lemon and coconut cake.
Here’s what you will need.
vegan Lemon and Coconut SurprisePrint Recipe
- Sugar 200g
- Baking Powder 1.5 tsp
- Lemon Juice 3 tbsp
- Lemon Zest 1 tbsp
- Whole wheat flour 200g
- Wheat flour 100g
- Shaved Coconut 3 tbsp (optional)
- Vegetable Oil 150ml
- Icing Sugar 100g
- Cold water 1.5 glass
Pre heat the oven at 200 C
Put the baking powder, sugar and coconut in to the bowl
Sieve the flour in to the bowl (this ensures it comes out smoother)
Add the zest and mix well
Add the oil gradually and keep mixing
Add the juice and gradually add water
Mix till its smooth and if you feel you need to add water if it does not mix well
Prepare your baking tin and put the mixture in a baking tin and bake for 15 minutes
Take the cake from the oven and wait for it to cool
When cool mix a some water and icing sugar in a measuring jug then put it over the cup cakes
This recipe can make one cake, I chose to do cupcakes for convenience. For a singular cake it should take 30 minutes in an oven. The coconut is optional. I would pair this with a moscato, sauterne or some very dry(Brut) sparkling wine, Cava, Prosecco or Champagne.
