Lazy Rosemerry & Garlic Potatoes

Growing up, I wasn’t a fan of potatoes. We usually had them boiled, once in a blue moon roasted, sometimes mashed but when I discovered baked potatoes. I was over the moon. I usually love to make this when I have people over for dinner. I call it lazy potatoes because there is no peeling involved and I can put them in the oven and not think about them. You can try this with sweet potatoes as well.

Lazy Rosemerry & Garlic Potatoes

Serves: 4 Cooking Time: 55 minutes

Ingredients

  • 0.5 kg of potatoes
  • 1 clove of garlic crushed
  • 100 g of rosemerry
  • 2 tsp of salt
  • 1 tbsp of vegetable oil

Instructions

Pre-heat the oven at 200 C

Cut the potatoes into quarters

Take a baking tray put baking paper

Put the potatoes on the tray. Spread them so they are not too close together. If the tray is too full use another one. If they are too close together they become soggy

Add the crushed garlic

Add the oil

Add the salt

Put the tray in the oven for 45 minutes. Keep checking.

Notes

It goes with fish, meat and veggies. If you are into hot sauce, you can always make a salsa to go with your meal. You can even serve it like this if you like.It also goes well with an Italian Red or a Pinot Noir

    Leaving the peels on works for some potato types , yes?

      It works with all potatoes except sweet potatoes. You would have to peel them. Actually I read somewhere it’s healthier to eat potato skin as it has all the nutrients. Just clean the potatoes really well.
