Foodie Gathering: Butternut & Carrot Soup

There’s nothing like having fresh produce from your own garden. It even tastes better. Sometimes I love soup so much I can have it for breakfast, lunch and dinner. I have grown to like butternut and I decided to combine my favorite vegetables to make soup.

This is particular soup is  great for summer or winter. If you like you can also wash it down with  wine .



  1. 1 Butternut
  2. 2 cups of Coriander / Cilantro
  3. 1 kg Carrot
  4. Half a kilo of spinach
  5. Courgette/ Zucchini
  6. 500g of coconut milk/ cream
  7. 1 cup of Chives
  8. 3  tea spoons of salt
  9. Freshly ground Pepper
  10. Chilli (optional)
  11. 500 ml of water


  1. Peel the Butternut and chop them into cubes
  2. Peel the carrots and chop them
  3. Slice the courgette/ zucchini
  4. Put all the ingredients in a pot and steam them
  5. When soft enough blend them or use a hand mixer
  6. Add coriander/ cilantro
  7. Put salt
  8. Add the coconut milk/ bring to boil
